I did this a few years ago and cut pieces into 8inch squares which is really handy for piecing and applique not having to cut from a large piece of material, it' s like housework for the sewing room but a lot more satisfying . I just sort them by colour and have small plastic lidded bins i can rifle through.. I like to sort mine by size, but fat quarters I sort by colour. The Go Cutter is the best thing ever for dealing with scraps. I like the half square triangle, because it allows me to make stars! Lisa let me pilfer her neutral scraps from my bin recently on one of our sewing days - and I immediately cut half square triangles with them, as I was nearly run out.
